Average take-home amounts:
• 1/4 Beef: ~90–100 lbs
• 1/2 Beef: ~180–200 lbs (double for whole)

Average cost for a 1/2: about $2,800 (less $400 deposit)

IT'S BEEF TIME!! We are taking beef orders for 2026. As always, COLORADO proud grass fed/GRAIN finished Choice Grade Beef. Same amazing Rancher (Cortese Ranch) partnered with same awesome Meat Cutter (Troy Crippen). We have beef available now through the end of July. Cost is $6.99/lb (hanging weight). $300 deposit for 1/4; $400 Deposit on 1/2; $800 deposit on whole.

🎄 Holiday & Scheduling Update 🎄

We have a few important updates to share with everyone:

• We are back to accepting animals for late season, for both previous and new customers.
• We will be closed for the Holidays from 12/24–1/1.
• Starting January 2, our hours will change to 5 days a week, 8:30am–4:00pm.
(Currently we are open 6 days a week and closed Sundays.)
• Drop-off times remain 9:00am–3:00pm.

To our previous customers we weren’t able to accommodate during 2nd–4th rifle season, we are truly sorry. We’re hoping many of you were able to quarter and freeze—if so, we can begin taking those animals in January.

For customers waiting on order status updates: if your portal shows “In Progress” or “In Freezer,” your animal has been processed and is most likely waiting on jerky. Jerky is a very labor-intensive process and takes extra time. You’re welcome to pick up what’s ready now and return later for the jerky if you prefer.

3rd Rifle Hunters: In order to accommodate the limited capacity available in our cooler, we will only be accepting previous customers starting 3rd season, on a very limited basis and by appointment only starting Monday Nov 10th. In addition, animals that are dirty or frozen with hide on will not be accepted. If you are an existing customer drop off hours Saturday Nov 8th are 8:30A to 4:00P, Sunday 8:30A-2P and By appointment starting Monday Nov. 10th, for animals already harvested.

I think we'll be okay opening weekend, but fill up fast after that. We will keep the voicemail (719) 748-5450 and website, www.crippensprocessing.com updated daily as we progress with space in the cooler.

Our regrets to inform our cooler is full and beyond capacity. We simply cannot keep up with the demand. We will start accepting again 3rd rifle, Sat Nov 8th. If you are a previous customer, you can 1/4, freeze and bring back to us in January.

Answers to many suggestions I hear:

We can not expand without completely relocating. We looked into it.
We have not found an EXPERIENCED, seasonal, local meat cutter per Troys expectations. He is extremely picky and the trade is a specialized one. We looked into it.
We will not purchase a bigger cooler. We can't keep up with what is in our cooler now and limited on space. We looked into it.
"Nobody cares, work harder" (Troy's favorite motto) We are working more hours than almost humanly possible. Troy gets up at 12:30AM - starts cutting by 1:30A. By 4P (closing time, he is exhausted). Folks, that is 7 days a week, 5 months straight. Our first day off is Thanksgiving. We looked into it.

Yes, we tried implementing new equipment. That has been helpful, but not as affluent as I'd hoped. We bought it.

We are going to keep on keepin on, and do our best to accommodate as many of our previous customers as possible at the best quality you've known and trusted for the last 14 years.

2nd rifle customers: We will be available Saturday-Monday 10/25-10/27 8:30a-4p., Closed at 2PM Sundays. Please note, starting Tues. Oct 28th, we will be by appointment only, previous customers only.

We will be particular on the condition of how animals are dropped off. If they are dirty, or frozen WITH hide on, we will not be able to accept them.

We are doing our best to accommodate as many as possible. Last year, between 1st and 2nd rifle season's, we had 9 days to clear the cooler from 1st rifle. This year, we only got 4 (not counting Monday as we still took in customers).

I can assure you we are doing our best to keep up.
Side note - any smoking orders (Summer sausage & snack sticks) will be pulled and frozen at the time of processing. We will make all smoking orders Jan/Feb. We are hoping this will allow us to accommodate more previous customers as Troy will have more time on the cutting table.

Hunters: Just a heads up, we will not be accepting any drop off's Tues. Oct 21st-Friday Oct 24th. It's been a successful 1st Rifle season! Troy needs an uninterrupted couple of days to catch up on what's in the cooler to prepare for 2nd rifle :) Thank you for understanding.

Important Customer Update
At Crippen’s Processing, we’re improving efficiency and invested in new machinery to better serve our customers while keeping quality top-notch.
Key Updates:

-All orders are now vacuum sealed, 1 # packages.

- Smoking products (summer sausage & snack sticks) will be pulled and frozen once capacity is reached. We will process all smoking Jan–Feb.

- No frozen animals with hide on accepted.

- Starting November 1st, we will be serving previous customers only. For those previous customers: Appointments may be required, and availability limited. Please refer to our website and/or voicemail for availability status

-Holiday Closing: - Thanksgiving: Nov 27–28 &
Christmas/New Year: Dec 23–Jan 2 (no exceptions)


Team Update: Bill Crippen has retired. Troy is our only meat cutter. Please be patient as we balance high demand with quality.

Folks, the time has come. With national beef prices going up, we're having to do the same to keep up. Our beef partner, Gary Cortese and Crippen's Processing have tried to hang on as long as possible, but the inevitable hit us. We still have 1/4, 1/2 and whole Grain finished, Choice Grade BEEF available!! While we can't guarantee another price increase, currently we are at $5.99/lb hanging weight. ($300 deposit on 1/4, $400 on 1/2, $800 on whole)
