Easy, high protein and such flavor!

Credit to chloeincharlotte 🦪🍷Drunken Saffron Mussels

✨ Steamed mussels in a saffron-infused white wine broth with lemon, cream, tarragon, and a touch of chili flake.

Ingredients:

• Mussels, cleaned and debearded
• Shallot, finely diced
• Garlic, minced
• k**b of butter & glug of oil
• Dry white wine
• Chicken stock
• Splash of cream
• Saffron threads
• Salt, to taste
• Lemon (juice and zest)
• Red pepper flakes
• Tarragon (dried or fresh)
• Fresh parsley
• Salt and black pepper
• Crusty bread, for serving

👉🏼Method

1. Grind a pinch of saffron with a small pinch of salt. Transfer to a small dish and add an ice cube. Set aside and let the saffron slowly bloom while you prep the remaining ingredients.
2. Melt butter in a large pot over medium heat and add oil.
3. Add the shallot and cook until softened, then stir in the garlic and cook until fragrant.
4. Pour in a generous splash of white wine and let it simmer for a few minutes.
5. Add a splash of chicken stock, a little cream, the bloomed saffron, lemon zest, lemon juice, red pepper flakes, tarragon, salt, and pepper. Add an extra splash of white wine if desired (I did!) and let everything come together for a minute or two.
6. Add the mussels, cover, and steam until they all open, giving the pot an occasional shake. discard any that don't open.
7. Taste the broth. Add additional lemon juice, lemon zest, salt, or pepper if desired.
8. Serve immediately, garnishing with fresh parsley, zest and a squeeze of lemon, with plenty of crusty bread for soaking up every last drop of broth.

On warm summer days like today this looks amazing. Time to dig out the rice paper.

If you love mediterranean flavors, and trying to get your protein in, this mediterranean rice paper steak wrap is so easy and it’s so good! I am pretty sure you won’t miss the bread with this one. I used steak here, but feel free to use chicken or your favorite protein.

Here is how I made it (makes 2 servings)

1.First let’s cook up some steak. I seasoned 1/2lb skirt steak with salt, pepper, 1/2 tbsp oregano, 1/2 tbsp garlic powder, 1/2 tsp paprika. Pop it into the air fryer at 400F for 10 minutes. Then let sit before you thinly slice it.

2.Wash and dry some iceberg lettuce (I used the 2 outer leaves for each, and thinly sliced 1 tomato.

3.Make your yogurt spread with 1 serving greek yogurt, 3 tbsp finely chopped fresh dill, 1 tsp garlic powder, a couple pinches of salt, and juice of half a lemon.

4.Make a simple red onion parsley salad. Just thinly slice 1 small red onion, add it to a bowl with 1 cup of finely chopped parsley, then juice of a lemon, a pinch of salt, and 1 tbsp of sumac. Mix it well, then let it sit for a couple minutes before you mix again.

5.When you’re ready to eat, dunk 3 sheets of rice paper into water for about 5 seconds, and shake off the excess water. Lay them out in a triangle pattern over parchment paper, add the lettuce leaves, add a couple spoonfuls of the yogurt sauce, half of the tomato slices, half of the thinly sliced steak, then top it with a generous amount of the red onion salad.

6.Fold sides of the rice paper over the middle, then roll it up nice and tight, burrito style, cut in half, and enjoy!

We have not bought salad dressing in years here on the ridge. Here are 3 fast easy and no chemicals dressing you can make at home. You are what you eat, eat healthy!

Classic Red Wine Vinaigrette Recipe
* 1/2 cup red wine vinegar
* 1/2 cup olive oil
* 1–2 teaspoons Dijon mustard (for emulsification)
* 1/2 teaspoon dried garlic
* 1/2 teaspoon dried onion
* 1/2 teaspoon dried oregano (or Italian seasoning)
* Salt and black pepper to taste

Asian Vinaigrette
- 1/4 cup neutral oil (I prefer using avocado oil)
- 1/2 cup rice wine vinegar
- 3 tablespoons honey (or maple syrup)
- 3 tablespoon sesame oil
- 1/2 teaspoon garlic Powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- Salt to taste�
Balsamic Vinaigrette

* 1/2 cup balsamic vinegar
* 1/2 cup extra-virgin olive oil
* 2 tablespoon Dijon mustard (helps emulsify/bind the oil and vinegar)
* 1 tablespoon honey or maple syrup (optional)
* Salt and black pepper to taste

Will keep fresh refrigerated in an airtight container for months.

For sweet potatoes:
4 medium sweet potatoes or 3 large sweet potatoes
3 tablespoon oil
1 tablespoon smoked paprika
3/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder

For Garlic Tahini sauce:
1/4 cup Tahini
1 tablespoon olive oil
2 tablespoon maple syrup or honey
1/4 cup Water
1 tablespoon chopped parsley (optional)
Smoked paprika
Garlic powder
Onion powder
Zest of 1 lemon
2 tablespoon lemon juice
1/4 teaspoon salt

1️⃣ Pre-heat oven to 400°
2️⃣ Cut the sweet potatoes into 2 in pieces. In a large bowl, add the sweet potatoes, garlic powder, onion powder, smoked paprika, oil, salt, pepper. Mix until well combined. Transfer to parchment line sheet tray and bake for 40 to 45 minutes. Remove from heat and set aside.
3️⃣ Make the. the garlic tahini sauce: In a bowl add the tahini, garlic powder, onion powder, smoked paprika, lemon zest, pamper syrup, parsley, lemon juice, olive oil and mix well until incorporated. Add the water and keep whisking until the sauce transforms into a perfectly smooth, creamy, and pourable consistency.
4️⃣ Transfer the roasted sweet potatoes in a serving platter, drizzle with the garlic tahini sauce, garnish with green onions, serve and Devour!
