When Cinco de Mayo lands on Taco Tuesday… don’t overthink dinner, just grab some Meadows Beef and get to it.

Our pasture-raised ground beef was made for nights like this...simple, flavorful, and worth every bite.

If tacos are happening at your house tonight, you’re doing it right!

Here is a simple recipe for some amazing shredded beef tacos:
Ingredients
• Meadows Beef chuck roast
• 1 tbsp olive oil
• 1 large onion, sliced
• 4 cloves garlic, smashed
• 2 tsp cumin
• 2 tsp smoked paprika
• 1 tsp chili powder
• 1 tsp oregano
• 1 tsp salt
• ½ tsp black pepper
• 1 cup beef broth
• 2 tbsp tomato paste
• 1 tbsp apple cider vinegar
• 1 bay leaf

Instructions
1. Sear the beef (This is important!):
Season beef with salt & pepper. Sear in hot oil until deeply browned on all sides.
2. Build flavor:
Add onion and garlic. Cook 2–3 min. Stir in tomato paste and spices.
3. Slow cook:
Add broth, vinegar, and bay leaf.
• Slow cooker: 8 hrs low / 4 hrs high
• Oven: 300°F (150°C), covered, 3–3.5 hrs (Best method, but both work great)
4. Shred & crisp (the viral part)
Shred beef, spread on a baking sheet, drizzle with a little cooking liquid.
Broil 5–7 min until edges are crispy and caramelized.

🌮 Taco Assembly (Crunch Mode)

You’ll Need
• Corn tortillas
• Neutral oil (for frying)
• Shredded Monterey Jack cheese
• Crispy shredded beef
• Fresh lime zest

How To
1. Heat a skillet with a thin layer of oil.
2. Lay tortilla flat, sprinkle on some Monterey Jack.
3. Add crispy beef, fold tortilla.
4. Cook until golden and crunchy on both sides.
5. Finish with fresh lime zest right off the pan!
6. Enjoy!
