When it's too hot to stand by the oven, this one only needs it for 10 minutes.

Ingredients
24 graham crackers, crushed
1/3 cup butter
1/4 cup packed brown sugar
1 (6 ounce) package raspberry flavored gelatin mix
1 cup boiling water
15 ounces frozen raspberries
20 large marshmallows
1/3 cup milk

2. Set aside 1/4 cup of the crumbs for the topping and press the rest into a 9x13 inch pan. Bake for 10 minutes, then let it cool.
3. Dissolve the raspberry gelatin in the boiling water, add the frozen raspberries and stir until they melt. Chill until partially set, then spread over the base.
4. Melt the marshmallows with the milk. Once cool, fold in the whipped cream and spread it over the raspberry layer.

Monkey Bread
My mom made this every Christmas morning, and we never once waited for it to cool.

Ingredients
3 (12 ounce) packages refrigerated biscuit dough
1 cup white sugar
2 teaspoons ground cinnamon
1/2 cup margarine
1 cup packed brown sugar
1/2 cup chopped walnuts (optional)

Directions
1. Preheat the oven to 350 °F (175 °C). Grease one 9 or 10 inch tube or Bundt pan.
2. Mix the white sugar and cinnamon in a plastic bag. Cut the biscuits into quarters.
3. Shake 6 to 8 biscuit pieces at a time in the cinnamon sugar and arrange them in the pan. If using walnuts, scatter them in among the pieces as you go.
4. Melt the margarine with the brown sugar in a small saucepan over medium heat. Boil for 1 minute, then pour it over the biscuits.
5. Bake at 350 °F (175 °C) for 35 minutes.
6. Let it cool in the pan for 10 minutes, then turn it out onto a plate. Don't cut it, the bread just pulls apart.

Stuffed Buffalo Chicken Shells
It all comes down to the moment the Monterey Jack melts into each shell.

Ingredients
3 cups shredded chicken
1 (16-ounce) container ricotta cheese, whipped
¼ cup unsalted butter
1 cup Buffalo sauce of your choice
16 ounces large shell pasta
Salt and pepper to taste (optional)
2 cups Monterey Jack cheese

Directions
1. Warm the shredded chicken in a skillet for a few minutes. Melt in the butter and stir in the Buffalo sauce.

5. Heat the oven to 350°F and lightly spray a 9×13 pan with nonstick spray.
6. Fill each shell using a cookie scoop and set them in the pan. Sprinkle Monterey Jack over each shell.
7. Bake 15 to 20 minutes. Don't overbake, or the shells turn crispy.

Cajun Salmon Alfredo
The trick is a hot cast-iron skillet and just 3–4 minutes on each side of the salmon.

Ingredients
1 Atlantic salmon fillet, skin removed
Olive oil
1 tbsp brown sugar
1 pinch parsley
1 tbsp paprika
½ tbsp cayenne pepper
½ tbsp seasoning salt
1 pinch black pepper
¼ cup heavy whipping cream
1½ shots white w**e (Riesling or fruity)
4 tsp butter
1 tsp Alfredo sauce
1 tbsp paprika
1 tbsp cayenne
1 tbsp ground oregano
¼ tbsp Old Bay
1 tsp brown sugar
1 tbsp parsley
2 tsp chicken broth
For the shrimp:
1 lb shrimp
½ cup Hennessy
½ stick butter
1 tbsp Cajun seasoning
2 tbsp brown sugar substitute
½ tbsp minced garlic
½ tbsp red pepper flakes
1 tsp onion powder
White pepper to taste
Parsley

Directions
1. Coat the salmon lightly with olive oil. Sprinkle seasoning salt, cayenne, paprika, Old Bay and black pepper evenly over both sides.
2. Cook it in a cast-iron skillet over medium heat for 3–4 minutes per side, so it gets a dark crust without drying out.
3. Heat the cream in a saucepan over medium heat. Add the w**e and stir for 1 minute.
4. Melt in the butter, then stir in the broth and Alfredo sauce until creamy. Stir in the seasoning mix.
5. Season the cleaned shrimp with white pepper, onion powder and Cajun seasoning.
6. Melt the butter over high heat, add the garlic, then cook the shrimp 4–5 minutes until pink. Pour in the Hennessy and keep tossing.
7. Drizzle the sauce over the salmon.

Albondigas Soup
I make a big pot of these every time the weather turns, and it never lasts two days.

1 lb lean beef
2 potatoes
1 can tomato sauce
2 full teaspoons long grain rice
2 carrots
1/2 cup cilantro
Half an onion, chopped

2. Chop the potatoes and onion and sauté them together in oil for about 3 minutes, stirring often.
3. Add the remaining 1 tsp flour and sauté about 1 more minute.
4. Pour in water to about 2 inches above the potatoes and add 1/2 can of tomato sauce to start, more if you like it.
5. Add the cilantro, about 1 tsp of the seasonings, the sliced carrots and the sliced jalapeño.
6. Gently add the meatballs, cover and simmer about 30 minutes, until the meatballs are cooked through and the potatoes are tender.

Browned hot Italian sausage links sit in a skillet of soft green and red bell peppers and onion. Olive oil, garlic and a little rosemary pull it all together, and the pan juices are worth mopping up.
