Corn 2026! 🌽

Lots of really good ears, lots of not really good ears from the rain (can’t be mad it rained though! I should’ve just picked it first 🤦🏼♀️), got some huitlacoche, and also still have some ears out there growing! The ones that went bad I’m leaving on the stalk to maybe be able to lay out for the deer and I’m still waiting for the fun, ornamental corn to get a little bigger.

Allllll of that corn only filled 3 quart bags but I think I way over packed them and it should’ve been more like 6 😂🤷🏼♀️ It’s okay though, the boys loveeee corn and we don’t eat it often so I will either just be able to have leftovers or I can break half off and only cook some. This is the first time I went ahead and cut it off the cob and I’m glad I did! It was a little more work upfront but will save freezer space and also make dinners a little bit easier 😊

Huitlacoche, also called corn s**t, or Mexican truffle, is a Mexican delicacy! It’s a fungal disease, tastes similar to a mushroom and is packed with protein, fiber, minerals and antioxidants. It also contains high levels of essential amino acids like lysine, which regular corn doesn’t have. I’m excited to try cooking it on my own this year and adding to quesadillas and enchiladas! 😋

Corn maze 2026 was a success! I go back and forth on if growing corn is worth it. I grow it because I can and have the space but it takes a lot of space and is such a sensitive vegetable to grow! Do you grow corn?! 🌽
