Hey Friends!! I'm on an 8 hour road trip taking my sweet Ava back University of Tennessee-Chattanooga for her second year of college. Jennie is in charge of the bakery-as she has been all week because I have been home with pneumonia. Good times 😷
Anyway, thought I would take this time to introduce myself to the newbies here and remind you all how this little bakery works!!!
I'm Tracy, the owner of PBI. I have been working at PBI since 2009 helping my friend Jen, when her and her Mom were running the bakery. The business changed, adapted, went through Covid, grew and grew some more. We needed more space and moved out of our tiny little bakery in back of The Brown Bag into our current space over 2 years ago. We are now located in The Monarch Building on the corner of Main and Independence. My entrance is on the Independence side-look for the sign and use your nose, you will find us!
My bakery technically doesn't have a true "storefront". My space is more of a wholesale kitchen. We bake for several restaurants and coffee shops. All that means is you can't walk in and buy a slice of pie or cookie from the counter. But......we do sometimes have "extras" that we sell. We usually always have cookies in the freezer you can buy. And sometimes you can get lucky and find an extra pie. But we don't normally bake items up to "sell" on a daily basis. Hope that makes sense!!! Your best bet in getting a dessert, is to go to the website www.piesbyinge.com and order ahead of time. Usually, a days notice is all I need. Or do it the old fashion way and give me a call. Also, follow Pies by Inge on Facebook. When we make extras I always post them on FB and it is a race to claim them. I mean it, you have to have quick typing fingers to claim!!
You can special order anytime, but our pick up times are limited. We bake Tues-Friday from 6am until 10:30-11 ish, just depending on the day. So that means there is no one at the bakery in the afternoons or evenings. Pick up is normally from 9:30-11 ish Tuesday - Friday. If you need to pick up outside of that timeframe, we can figure something out, just let me know.
Check out our website to see all of our desserts. We are usually at the Monticello Farmers' Market every other week. Next time we are there will be Sept 17th. We miss a week because we are headed back to Hobnob Market!!! Check out my other post for info.
