What do you do when the squash has gone crazy in the garden and C&L has a short run of ground chicken in stock? We have the answer!

Here’s the recipe for these amazing squash & ground chicken fritters!

1 zucchini, grated and water squeezed out
0.5-0.75 cup grated parm
0.5-0.75 cup white cheese of your choice (mozzarella, pepper jack, gouda, etc.)
1lb ground chicken
1T dry parsley
1t ranch seasoning
1t dry basil
1t dry dill
1-2t salt
1t black pepper
2 eggs

Mix it all up, scoop onto an oiled griddle or pan heated to med-low, fry until browned on one side then flip. Done when internal reaches 165*F.
