COQODAQ is NYC Best Korean Fried Chicken. It took 14 months of research and development and about 10 million dollars invested, all to engineer what might be the perfect fried chicken and has become one of my favorite culinary experiences.

The ‘Bucket List’ is their menu format featuring four signature sauces, glazes, bon chon and two courses of the greatest chicken I’ve ever had, and the kicker? it is one hundred percent gluten-free, from the batter, to the sauces. And since it’s very difficult to get into the restaurant, I wanted to figure out if we could bring that exact experience that I enjoy so much to your kitchen. Over all the trips to Miami and all the Cuban sandwiches over the years, Las Olas Cafe was the only one that really spoke to me. And it wasn’t just the perfect shredded roast mojo pork, or the salsa verde they served it with. It was how they served it that won me over. They don’t cut it in half. They cut it lengthwise, long, skinny, seared hard on the griddle. Seared on the griddle with the meat and pickle mixing with the mustard gives the flavor profile of like a mustard fried in and out burger but the long skinny form factor makes it eat cleanly like a hot dog. The worst thing you could do to a sandwich or a burrito, is over-stuff…except for 1 thing, the chicken caesar wrap. There’s this place Vinnie’s All Day in Boca, that is currently having its moment on the internet due to their ability to stuff an ungodly amount of chicken caesar salad into their wraps. Now I’m not going to Boca, I’m not even going out to the many places in new york that make it well…we’re talking about salad here guys… we’re talking about 4 simple to execute elements that we can make at home as well as any place in the country. I don’t know what it is, but every New Year I get a serious craving for Chinese food, and this year, it’s Orange Chicken.
