Pasta and Grilled Chicken
* 200 g penne pasta
* 2 boneless, skinless chicken breasts
* 2 tbsp olive oil
* 2 cloves garlic, minced
* 1 tsp dried oregano
* 1 tsp dried basil
* Salt and pepper to taste
* 100 g cherry tomatoes, halved
* 50 g fresh spinach leaves
* 30 g grated Parmesan cheese
* Juice of half a lemon

Step 1. Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
Step 2. Rub chicken breasts with olive oil, garlic, oregano, basil, salt, and pepper.
Step 3. Preheat the grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side or until fully cooked and juices run clear.
Step 4. Let the chicken rest for 5 minutes, then slice into strips.
Step 5. In a large bowl, toss the cooked pasta with cherry tomatoes, spinach, lemon juice, and a drizzle of olive oil.
Step 6. Add the grilled chicken slices on top and sprinkle with grated Parmesan cheese.
