How many years have you participated in Brisket King NYC

First year tabling and sampling our sauces, but Achilles Heat made a cameo last year through my collaboration with .

How important are chef collaborations to you and your sauces?

Chef collaborations are central to how I’m building Achilles Heat® as a community-driven NYC brand, helping people envision how my smoked chili crisp and sauces come to life on the plate across different cuisines.

Examples of successful chef collaborations?

A highlight was incorporating Achilles Heat Smoked Chili Crisp into his championship-winning “BBQ cereal” at Brisket King.

Another standout was , featuring it across a full menu, from a signature pie to a dessert collaboration with , plus a smoked Achilles Heat Negroni

Your sauces, chili crisp… the journey?

I started smoking peppers during the pandemic, which led to creating my first smoked hot sauces. 

The smoked chili crisp came after as a one-off for a market social, and the overwhelming response and demand for it shifted how I approached launching the brand. I ultimately chose to lead with Achilles Heat® Smoked Chili Crisp.

It’s been an exciting journey so far, already landing in some great specialty shops and small markets. Winning Best New Sauce at Sauce King NYC 2025, especially just out of the gate, has been a huge moment and something that’s really fueled my momentum. I’m so appreciative of all the support and truly honored to be here.

Got a good Bloody Mary recipe?

I do! I build it with my Oh, Sweet Vidalia! smoked hot sauce, tomato juice, pickle brine, lime, celery salt, and Worcestershire.

For Brisket King, I’d top it with a thick slice of smoked brisket, pastrami-style, basted with Achilles Heat® Smoked Chili Crisp, speared with a pickled baby onion and a kosher dill
