Before we ask a vineyard owner to harvest the grapes, Christian tests the sugar content. We are letting these grapes live on the vine a little longer this time to take down the acidity.

This good blog post reminds me of how people perceive our Viognier - its bone dry but fruity with an amazingly fragrant scent so it messes with the head. The brain says it’s sweet, but it has zero residual sugar.

Fruitiness is an aroma your nose reads. Sweetness is sugar your tongue measures. Learn to keep them separate and your preferences will finally make sense.
