Scenes from harvest at GC Wines: a yellowjacket enjoying juice, pumpovers on Pinot Noir in the bin, and stems spilling out of the destemmer.

All of these pictures carry a unique harvest sound: the buzz of yellowjackets humming over grapes, the Pinot Noir juice hitting the cap with a splash, the destemmer turning, the motor humming. Together, the noises of harvest are fine-tuned to sound like music to a w**emaker’s ears.

Pumpovers and punch downs are an important part of harvest work at any w**ery.

Pump overs (remontage in French) happen early in the process, and depending on the w**ery happen once to many times daily. Pumping the juice from the bottom of the tank over the grapes helps to integrate flavors and extract color from the skins. It also helps keep w**e cleaner, helping to stave off bacteria.

Punching down can be done by hand (seen here) or with various machines, and this happens later in fermentation. As fermentation progresses, CO2 is released and the grape skins form a cap on top of the fermenting w**e. This cap has so much to give! Color, flavor, and tannins can still be extracted, and so a few times a day we punch the cap of grapes back down into the juice.
