Happy International Sauvignon Blanc Day! Affectionately known as "Sauvy B", Few varieties articulate terroir with such clarity. In Sancerre, expect cut stone, citrus oil, and a restrained, mineral spine. From Marlborough, the profile shifts to high-toned aromatics—passionfruit, lime leaf, and a piercing acidity. In Napa Valley, the grape broadens: riper orchard fruit, subtle tropical notes, sometimes layered with texture from lees or oak.

Service matters:
• 45–50°F to preserve aromatic lift without muting structure
• Medium-sized white wine stem to focus intensity
• Decant selectively—structured or reductive examples can benefit

Pairing is driven by acidity and aromatic affinity:
