Lunch: fresh, colorful, simple, beautiful variety ❤️🧡💛💚💙💜 Salad w/mixed greens, carrots, walnuts, grape tomatoes, drizzled w/some Brianna's blue cheese dressing cut w/apple Cider vinegar with broccoli & carrots w/ginger lightly sauted in sesame oil and steamed in 2 TBL broth, w/soy sauce & toasted sesame seeds. (*Lesson at end) Breakfast this morning w/black coffee: an egg, fried with sh*take mushrooms, and topped with provolone cheese, on a toasted pita w/avocado, home pickled onions, and cherry tomatoes. Seasoned with mushroom salt (see picture) & pepper. Fresh blackberries for dessert. Notice the variety, and the inclusion of a pickled veggie. Your gut biome LOVES variety! Remember to try a wide variety of healthy foods to feed the beneficial bacteria in your gut and make your stomach happy 😊

More successful experiments with homemade veggie black bean burgers. I also did some as cupcakes, the way I also do with latkes. These have black beans, sautéed onions, garlic, potatoes, parsley, cottage cheese, eggs, chickpea flour, toasted sesame oil, cumin, turmeric, red & black pepper, and Earth Prganic Mushroom Seasoning Powder (as a salt substitute).

I've been playing with making the perfect black bean burger and enjoying every bite! Ingredients, grilling, frying, toppings, sauces... I'll post soon - I keep eating them all too fast! But I'll leave you with my recipe for an amazing Chipotle Garlic mayo that will go on any kind of burger. My son made sure that it was easily reproducible! Get a small bowl, cutting boars, and chef knife (my go-to). Finely dice one large clove of garlic and put in bowl. Dice a Chipotle pepper (the ones in the small can, actually jalapeno in Chipotle sauce) and add to bowl. Add some of the sauce. Add 1/3-1/2 cup of mayonnaise or Miracle Whip. Add a few squirts of organic ketchup. Stir, taste, and be amazed!

It’s that time of year again folks.

Cabbage Roll Season! Yay!

This is also a really good slow cooker recipe, Stove top or the way I like making them in the oven.

**Croatian Cabbage Rolls (Sarma) Recipe**

*Serves: 8-10 people*

**Ingredients:**

For the Cabbage and Filling:
- 2 large heads of green cabbage
- 2 pounds of ground pork
- 1 pound of ground beef
- 2 cups of cooked rice
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon of sweet paprika
- 2 teaspoons of salt
- 1 teaspoon of ground black pepper

For the Sauce:
- 2 (15-ounce) cans of tomato sauce
- 2 cups of sauerkraut, drained
- 1 cup of sauerkraut juice (from the jar)
- 1 teaspoon of sugar
- 2 bay leaves
- 1 teaspoon of ground black pepper

**Instructions:**

1. Preheat your oven to 350°F (175°C).

2. Fill a large pot with water and bring it to a boil. Core the cabbages and place them in the boiling water. Cook them for about 5 minutes or until the leaves are pliable. Drain and let them cool.

3. While the cabbage is cooling, prepare the filling. In a large bowl, combine the ground pork, ground beef, cooked rice, onion, garlic, paprika, salt, and pepper. Mix well until all the ingredients are evenly distributed.

4. Once the cabbage has cooled, separate the leaves. Take about a 1/4 cup of the meat filling and place it near the base of a cabbage leaf. Roll the leaf around the filling, tucking in the sides as you go.

5. In a separate bowl, mix together the tomato sauce, sauerkraut, sauerkraut juice, sugar, bay leaves, and pepper to create the sauce.

6. Spread about half of the sauce on the bottom of a large baking dish. Place the cabbage rolls seam side down in the dish. Once all the rolls are in the dish, pour the rest of the sauce on top.

7. Cover the dish with foil and bake for about 2 hours or until the cabbage is tender and the filling is cooked through.

8. Remove the cabbage rolls from the oven and let them rest for about 15 minutes before serving.

Refrigerator Management - some easy tips to reduce food waste in your kitchen & maximize your budget: 1) Move perishable foods to the front of the fridge for prompt use. 2) Get creative with food items already in your fridge & pantry rather than quickly buying more. 3) Preserve leftover foods & flavor enhancers like tomato paste, wine, herbs in oils, coffee, etc. in silicone ice trays. When frozen, tranfer them to resealable plastic bags & label with a Sharpie on masking tape, and store in freezer. 4) Get to know the dark corners of your cabinets & pantry for different sauces, spices, grains, and even canned goods that can be used creatively in dishes. If you can enhance lighting & access to all your food items, you will have a more functional kitchen and better use of storage space. I also use some small multi-tier shelves to get spices in different levels in my cabinets, as well as a rotating spice rack that I always keep organized, so I know where my spices are. Lemongrass Chicken & Basmati Rice. A friend showed up with lemongrass and chicken and asked if I could put together a dinner with these. I made a wonderful combination of Vietnamese & Indian dishes. First, a marinade w/chopped lemongrass (remover the tough green sheaths and you will have a 6" white core to chop), soy sauce, maple syrup, brown sugar, lime or lemon juice & zest, lots of fresh chopped garlic & ginger, olive oil, and fish sauce (yes, it will put it all together) in a mixing bowl. Chop chicken into cubes (consistency of cut = consistency of cook) and mix in marinade. Slide mixture into a zip lock bag and store in fridge for 30 min or overnight. Prepare basmati rice. Startk by grinding cumin seeds, garam masala seeds, and cardamom seeds. Remove cardamon husks. Heat pan or rice cooker and put a pad of ghee in. Add spices, add water and rice. I add some boullion & frozen peas too. I used some diced hot green peppers as well and left some to sprinkle on later. Preheat grill & insert skewers into seasoned chicken cubes. Grill until dark golden brown on each side. Serve skewers on a big bowl of rice and sprinkle chopped hot green peppers over the top. Enjoy!
