Each grain has a genetic disposition to grow well in different terrior (climates/ soil types). In the South, we excel at a wheat varietal called soft red. The featured purple straw in this recipe is a heritage version of soft red.

This grain is vitreous (glass like in nature) and has a natural sumptuous graham cracker flavor that exceeds other wheat verietals often adding a unique brownish/ red hue to your pastas, breads and other baked goods.
