Tomato gravy is one of those cozy, old-fashioned, Southern-style things that makes simple food taste special. You can put it over biscuits, rice, meatloaf, pork chops, salmon, or even grits.

Here’s a classic and dependable way to make it:

What you need
• 2 tbsp butter (or bacon grease for more flavor)
• 2 tbsp flour
• 1 cup milk or broth (both work — milk makes it creamy, broth keeps it lighter)
• 1 can diced tomatoes or about 2 cups fresh tomatoes (chopped)
• Salt & black pepper to taste
• Optional: pinch of sugar if the tomatoes are sharp, splash of hot sauce, or a little onion

How to make it
1. Melt the butter in a skillet on medium.
2. Stir in the flour and cook for about 2 minutes until it turns light golden — this takes away the raw flour taste.
3. Whisk in the milk or broth slowly. Keep whisking so it’s smooth and thickened.
4. Add the tomatoes with their juices.
5. Simmer 5–10 minutes. The longer it goes, the thicker and richer it gets.
6. Season with salt, pepper, and a tiny pinch of sugar if needed.

Variations depending on mood
• Creamier: use all milk and finish with a splash of cream
• Savory: sauté a little onion with the butter before adding flour
• Country breakfast: use bacon grease instead of butter and crumble bacon on top
• Mediterranean twist: olive oil instead of butter + oregano + garlic

5. Place in a greased bowl, cover, and let rise about 1 hour or until doubled.
