The sheer amount of times we thought we were going to move to Italy...

And then thought we weren't over the last 3 years is INSANE.

Changing your life is messy.

Whether that's eating better to heal autoimmunity or creating the life of your dreams...

Fear, uncertainty, stress, overwhelm...

All of it can paralyze you into inaction.

One thing this move to Italy has taught me already is just how much happens before anyone sees the "big change."

People see the announcement.

They see the exciting part.

But they don't see the years of conversations, research, planning, saving, paperwork, and uncertainty that came before it.

The same thing is true when it comes to healing.

People see someone feeling better, eating differently, exercising consistently, or managing their symptoms more effectively.

What they don't see are the hundreds of small decisions that happened behind the scenes to get there.

I think that's why so many people get discouraged.

They compare their day one to someone else's year five.

Whether you're trying to move across the world, improve your health, or simply build better habits, progress rarely comes from one giant leap.

It's usually the result of a lot of small steps that nobody claps for.

I promise I'm not sharing these uncomfortable truths just to aggitate you. I just would never want anyone with autoimmunity to relocate or travel thinking they can eat and drink any and everything they want and it's not going to contribute to worsening symptoms, relapse, etc.

I reversed chronic migraines, deblitating joint pain, and pesky ezcema in 3 months of eating anti-inflammatory back in 2015.

And I didn't have to move anywhere to do it.

It happened right here in America.

While yes, food quality is better in Europe and all around the world than it is in America...

Ultra-processed packaged foods and fast food can be found everywhere.

That's why chronic inflammation-related conditions like autoimmunity are on the rise globally.

If European food was enough to heal autoimmunity...

Why do 1 in every 60 kids in Italy have Celiac?

Why does 2% of the Finnish population have Celiac compared to 1% everywhere else in the world?

Why are Psoriatic Arthritis rates higher in Spain than anywhere else in the world.

I think healing requires choice.

You can't just eat anything you want in Europe or beyond and not expect to get autoimmunity.

Do I think folks with autoimmunity and other chronic inflammation-related conditions often feel better abroad?

Yes.

Do I also think they are over generalizing when it comes to it being the food that did it for them?

Also yes.

There are so many triggers of autoummunity.

Likely, people are able to eat "anything they want" abroad because they're not as stressed.

They're enjoying their lives.

They're spending quality time with others.

(All which has great effects on the nervous system.)

They're eating slower.

Eating sitting down.

Walking after eating.

(All which contributes to better digestion.)

And yes, they're eating more single ingredient whole foods! Which can do wonders for your gut health, digestive system, and immune system.

And I've been cooking majority of my meals at home with single ingredient foods since 2004.

You don't need to move abroad to heal autoimmunity.

There are soooo many different triggers for autoimmunity. Including:

Poor gut health
Chronic stress
Nervous system dysregulation
Environmental toxicant exposures
Underlying co-infections and viruses
Sedentary lifestyle
Not having time/energy/ability to do things that bring you joy in life
Etc.

That's why I do believe people experience fewer symptoms when they move abroad.

1.) They are eating more single ingredient whole foods (AMAZING!! πŸŽ‰)

2.) They're walking everywhere

3.) Their stress levels decline

4.) Their nervous system regulates

5.) Their gut health improves (see #1)

If European food was enough to heal autoimmunity...

Why do 1 in every 60 kids in Italy have Celiac disease?

Why does Finland have a 2% rate of Celiac disease amongst their population when globally, that number is 1% in most other countries?

Why does Spain report having one of the world's highest rates of Psoriatic Arthritis? (With 0.58% of their population having this condition. And I'm sure plenty others go undiagnosed each year.)

There are MANY contributing factors to autoimmunity.

Changing your diet to eating a majority single ingredient plant-rich foods if you currently eat mostly ultra-processed packaged foods...

Fast food...

Convenience meals like frozen or microwaveable meals...

And restaurant food...

Will absolutely help you lessen inflammation, decrease the symptoms of your condition, and stop disease progression.

But if you only ever work on your diet, and you never address the other factors listed above...

You'll constantly flare.

But the good news is:

πŸ‘‰πŸ½ You don't have to move abroad to work on any of this

If you're struggling to do this on your own, you're not doing anything wrong.

This is hard work.

This might ruffle some feathers, but...

We're not moving to Italy because we think "the food is so much better in Europe".

Because I personally still believe there is a lot of personal choice involved in eating healthy no matter where in the world you are.

You still have to read food labels at the grocery store.

You still have to do Flare Free math when you indulge in restaurant food, takeout, desserts, and other treats.

Not everything is organic.

And yes, glyphoaste is still legal to use in Europe until 2033 because according to the European Food Commission...

"there is currently no scientific or legal justification for a ban."

Now...Italy does have restrictions around the use of glyphosate. It's not allowed in public places, on crops right before harvest, or on any ground that is mostly sand to protect ground water, which is great!

But pesticides aside...

Gluten, dairy, and sugar are IN EVERYTHING in Italy.

And those are the top 3 foods the National Institutes of Health recommends removing from your diet to help heal leaky gut, which is one of the top 3 triggers of autoimmunity.

So no.

We're not moving because we'll be able to eat anything and everything we want because the food is so much better over there.

I think it's much more nuanced than that.

So why ARE we moving?

I'll explain that next.

P.S. before you come for me...I'm not bashing Italian or European food at all. I'm just saying, you still have to be careful with what you eat - even in Europe - if you have autoimmunity.
