NEWS FROM Apéro Bistro

Steve and Elise are wrapping up a fantastic season at Apéro Bistro and are now counting down the final days before taking a well earned break for some upcoming travels.

The bistro will close on 5th June before returning later in the year, so now is the perfect excuse to head out to Spring Vale, soak up the vineyard atmosphere and enjoy the last of the season’s beautiful blackboard specials.

There’s still a little time left to enjoy it before they head off on their adventures.
Drop in, enjoy a meal and wish Steve and Elise well before the doors close for the season.

On Friday, our Spring Vale family lost a very special 4 legged friend 💔

Our beautiful Maggie took her final breath peacefully with her family by her side, and the winery feels a little quieter without her here.

For the past ten years, Maggie was more than just a dog, she was part of everything we did. She spent her days wandering the winery, never missing a buggy ride, greeting visitors at the Cellar Door, soaking up pats and faithfully following Tim wherever he went. If you visited Spring Vale, chances are you met Maggie too.

She was gentle, loyal, loving and endlessly kind natured. The sort of girl who made people smile without even trying.
We feel incredibly lucky to have shared so many years with her. She brought so much love, comfort and happiness into our lives and into the lives of so many others who walked through our doors.

Run free sweet girl. Thank you for every moment, every cuddle and every tail wag.

Spring Vale Pinot Gris 2025

Lifted pear, citrus and delicate floral notes meet an intriguing roasted hazelnut edge in this beautifully expressive Pinot Gris.

Textured and layered, the palate reveals stone fruit and nougat, with time on lees adding depth and richness. Fine tannins carry through to a long, elegant finish.

Tim has recently returned from Singapore where he attended the three day Aussie Food Fest – Savour the Flavours of Australia, proudly showcasing a true Taste of Tasmania through our food and wines, this event was held by Little Farms Singapore's Neighbourhood Grocer. Fresh, high quality produce & healthy foods lovingly sourced.

As part of the trade mission, Tim also attended a fantastic dinner with Guy Barnett, highlighting the strength and reputation of Tasmanian produce on the global stage.

Even more exciting, Tim is supporting the launch of Spring Vale Wines across all Little Farms venues throughout Singapore. This is a huge step in sharing our Tasmanian wines with a broader international audience.

From Tasmania to Singapore… not a bad journey, and one the whole Spring Vale team is incredibly proud of.

Harvest is officially done!

With many hands helping and the use of a few big toys all the grapes are now off the vines at Spring Vale, and what a season it’s been. The vineyard has done its part now it’s over to the winery.

We’re straight into the next stage, busy processing, pressing and carefully guiding this year’s fruit as it begins its journey into wine. It’s a hands on, around the clock time of year, but one we love where all the work in the vineyard starts to come to life.

The next chapter is underway, and we can’t wait to see how this vintage unfolds.

Meet Maggie 🐾 our most loyal (and possibly most popular) team member at Spring Vale

This beautiful Chesapeake Bay Retriever is never far from Tim’s side, keeping a close eye on everything happening around the vineyard. When she’s not “supervising,” you’ll usually find her at the Cellar Door, ready to greet visitors and happily accept a few pats along the way.

If you’re visiting us between 11am–4pm, don’t be surprised if Maggie is there to welcome you, she takes her role very seriously.
