Our housemade lasagne layers rich Bolognese and whipped ricotta, finished with a generous scattering of parmesan. It’s the sort of thing that would take an afternoon to make — and about 45 minutes to heat through at home.

A Decade of Meatsmith – Our Team

Over the past decade, many hands have shaped Meatsmith.

To every colleague – past and present – who has been behind the butcher’s block, in the kitchen or serving our customers, thank you for the care, skill and hard work you’ve brought to it all.

If you’re firing up the grill, there are some important things to remember. To achieve the best results when cooking over coals, it’s essential to have total control over the temperature. To hit and maintain the required heat for cooking on a charcoal BBQ, there are three rules we live by:

1. It’s all about the balance of fuel and oxygen
2. Use a charcoal chimney
3. Make sure to use those dampers

Our seasoned belly porchetta has long been in our core range at Meatsmith, and is one of the most popular items we prepare.

While it can be cooked entirely in the oven, we recommend starting it low and slow indoors, then finishing over coals for the best result.

Roast at 130–140°C for 2–2.5 hours. As it cooks, bring your coals to a white-hot heat. Transfer the porchetta to the rotisserie and cook over the coals for 15–20 minutes, until the crackling is crisp and deeply golden.

Chapters include: Something Casual, Salads & Vegetables, Comfort Food, Time to Kill, and Staple Recipes.

Leftovers are one of the best things about Christmas.

Together with our friends from SHADES, we’ve put together three of our favourite ways to use up leftover Christmas ham:
An epic Christmas sandwich, a ham and Comté Pithivier, and a Tartiflette, a comforting dish made with ham lardons, potatoes and cheese.
