Some mushrooms can’t be farmed. They have to be found.
Morels are one of the rarest ingredients in the wild food world. They grow for a few fleeting weeks in a year.
Every single one is foraged by hand.
Jo from Force of Nature Food Co. spends those weeks combing the bush for them: honeycombed, earthy, and unmistakably wild.
Their flavour is deep and smoky with a nutty undertone, closer to truffle than button mushroom, and it holds its own against butter, cream, thyme, and a good glass of Pinot Noir.
Slice them into a risotto, fold them through a brown butter pasta, or simply pan-sear with garlic and let them speak for themselves.
