We raise Native Longhorn Cattle as well as

So nutrient dense, rich with flavor and taste.

Longhorn cattle are another breed worth discussing in the history of beef in the US. For many years, beef was derived from Longhorn cattle that roamed in grasslands of the West. They were gathered and drove by cowboys to railheads to be shipped back to the east for harvest. Because of the harsh conditions, Longhorns needed to be hardy, fertile, and long-lived. These traits were naturally selected over beef traits of muscling, growth, and marbling. As cattle became more heavily managed, other breeds such as the Hereford and Angus were used to raise cattle with more beef-important traits. The Longhorn breed almost disappeared, but a few breeders preserved them and have brought them back to preserve this piece of agricultural history.

The Prime Rib is what is commonly known as a Rib Roast. It is cooked as a whole roast and sliced into steaks after its cooked. It can be smoked.
