Are you trying to SCALE back on tin foil, just like us? 🐟 We've been grilling our fish on a bed of fruit slices for years, and we tell everybody about it!

Just put thick slices of citrus, apple or pineapple straight on the grill, then put the fish on top. Season with herbs and spices!

Our favourite pairings:
🍊 Blood orange + rosemary
🍋 Lime + dill
🍎 Apple + thyme + cinnamon
🍍 Pineapple + cilantro for a tropical twist

Add a little oil, salt and fresh juice to your fish, grill with the lid closed for ~10 minutes on medium heat, and dinner is basically done!

Nearly HALF of fish in Canada can be mislabeled… and most people have no idea. 🤷‍♀️ A national study found that 44% of fish was labeled as the wrong species

Why does this happen? Once a fish is filleted, many species look almost identical. Sometimes it’s an honest mistake, but often it’s swapping a lower-cost fish for a premium one. 🔀

And that matters more than people think:
❌ You might be overpaying
❌ You might not be getting what you expect
❌ You can’t always trust the label

That's why responsible farmers like us focus on being "fully traceable". ♻️

That means we track every fish from egg to harvest, with detailed records at every step. And those records are verified through third-party audits so they aren't HAKE news! 🤸

So when you get a Springhills delivery, you're never SHELL shocked what's on your plate! 🫧

Another great reason to buy local.

PALE SALE is back... FARM PICK-UP and CASH only. No deliveries this year. 🐟

“We’re calling it our SMALL AND MIGHTY PALE SALE! 🎏
Starting Friday, May 8 running all weekend.
These B-grade fillets may be paler, smaller, or cut a little oddly.

🚨 TWO OPTIONS THIS YEAR 🚨
1️⃣ 15lb case — $100 (cash)
Individually vac-packed, mixed sizes and shapes (about 18 - 22 fillets in a box)

2️⃣ 30lb case — only $180 (cash)
Water-glazed and frozen loose, all 4–6oz fillets, nearly A-grade (about 100 fillets in a box)
Note: They look paler frozen due to glazing — colour returns when thawed.

Most of the trout in this year's boxes will taste similar to our A-grade trout (just not as magazine-worthy!). A small portion may come from early-maturing trout, which some find have a slightly different taste.

FIRST COME, FIRST SERVED. No holds. We expect to sell out early.
👉 We’ll post when we’re sold out here and on Instagram, and update our voicemail (519-364-7803).

🛻 HOW TO PICK UP🛻

Fishy podcast drop 🎧 Springhills’ RJ Taylor talks trout — and the opportunity for Canada to grow more of it — on the popular Salmon Farming: Inside & Out podcast with Ian Roberts and Aquaculture North America .

The conversation covers the hidden history of trout farming in Ontario, and why now is the time to scale up domestic production… before we get outpaced by imports from countries that don’t share the same high standards for environmental responsibility and animal welfare.

If you’ve got 30 minutes, give it a listen 👇

Bonus episode! Live at the Canadian Freshwater Aquaculture Conference, Ian Roberts sits down with second-generation trout farmer, R.J. Taylor. He talks about

Love our Coho Salmon & Pickerel? 👀 This update is for you!
1️⃣ Sadly, we’re oFISHally sold out of coho salmon boxes after an unexpected run on sales. You can still catch our last coho in the remaining mixed boxes—after that, we’ll be switching to Atlantic salmon.

You won’t have to COHO for too long, though—we’ll be harvesting more coho salmon in late fall!

2️⃣ You’ll also notice a significant price increase on pickerel. After a strong decade on Lake Erie, quotas are now being reduced to keep stocks healthy and sustainable for generations to come… and that means a higher price. 🙌

One of the things we’re proud of is always providing eco-certified fish—our pickerel is MSC certified. That certification isn’t just a label; it means fisheries are closely monitored and quotas are adjusted to protect fish populations. 🌎

Here are our new prices on pickerel:
• 2 lb pack – $44
• 5 lb case – $98
• 11 lb case – $195

Pickerel remains one of the most sought-after fish from Lake Erie, known for its mild flavour and firm texture. We’re proud to source it through a group of independent Canadian fishers committed to doing things the right way.

And you can find pickerel in our new COASTAL CATCH SAMPLER, along with halibut and haddock, 5lb for $100! 🌊

3️⃣ You’ll also notice some smaller price adjustments on our trout and Arctic char, reflecting rising feed costs, which are our biggest cost in raising fish.

We know price changes are never fun, but sustainability and supporting responsible Canadian producers will always be at the core of what we do. 🤸

Thanks for keeping your FINS up and supporting local—it truly means the world to us! 🐟

🚫 Say NO to 🚫 ANTI-fish language. We at Springhills have let this slide for far too long... Fish are our friends. Not our punchline. 🤣🐟

Here are 7 ways you might be low-key insulting our underwater heroes 🙃

1️⃣ "HOLY MACKEREL!"
The mackerel is not the Pope. It’s not Gandhi. The mackerel just wants to be an everyday fish.

2️⃣ "THERE ARE PLENTY OF FISH IN THE SEA"
Haven’t you read the news in the last few decades? In many places, the seas are emptying faster than an airport during COVID.

3️⃣ "DRINK LIKE A FISH"
If you drink like a fish, you’re definitely getting stuck as the designated driver. Fish like trout don’t even drink water—let alone a 6-pack!

4️⃣ "BOTTOM FEEDER"
Those poor, hard-working fish are literally cleaning the planet all day. Let’s show some respect!

5️⃣ "SLEEP WITH THE FISHES"
Fish don’t even sleep. And they did not consent to being part of organized crime metaphors.

6️⃣ "LIKE SHOOTING FISH IN A BARREL"
You’ve obviously never tried catching the last fish in a tank. You’d have an easier time finding a lost kid at Disneyland.

7️⃣ "COLD AS A FISH"
They just vibe with the environment. Sorry they don’t waste calories on something as ridiculous as staying warm.

Our fish thank you for keeping your humour dry... and proFISHional. 🤣🐟

Things might be uncertain right now... but one thing we do know? Y'all never go wrong keeping it local! 🍁🐟 A huge thanks to everyone who's been keeping their FINS up and supporting Canadian small businesses! 💪🎏

Our family is SOLE lucky to have such a loyal group that chooses to source their fish locally. It means a GILLion to us (SEA-riously!)

We keep growing the business on many fronts, but home delivery is still oFISHally our favourite. It's the most fun and rewarding because we get to SEA you and chat about sustainable fish and your delicious dinners!

When you choose Canadian fish (rather than imported fish with a sketchy past), you're choosing to care for the planet, support your hardworking neighbours, and reward those who treat their animals right. 🥳

AnyFIN is possible when we support each other close to home. From our fishy family to yours... thanks for riding the waves with us and helping Canadian fish farming thrive. We think you're KRILLING it! 🐠🎉

"You get a flood! And you get a flood! Everybody gets a flood!🌊" When we were kids, the farm would flood every year or two... this year we've had 8 floods! 💦

The silver lining is that the water always rises slowly, so we have time to move fish farther up and out of the flooding zone. That stops the situation from getting too fishy.

Flooding also brings in extra mud and sticks from the river, which means other farm jobs have to wait. Things like pond stocking get delayed until conditions clear up a bit.

One thing we're always thankful for is that trout naturally swim upstream. So even if there is a surprise event, they are not trying to swim out of the farm. They know where the good water (and food!) is.

This year brought an extra twist. The flooding stirred up the springs and one of our underground water lines burst. If you have visited the farm in the last month and wondered why there is a big orange pipe running all the way up to the house, that is the reason. Not exactly the farm décor we were going for...!

Fish farming means working with nature every day. Sometimes that brings great water temperatures, strong flow, and happy fish. Other times it brings floods, mud, broken water lines, and a few unexpected plot twists. Even farms that are not connected to the river can still get caught up in the ripple effects.

Good thing this is not our first rodeo. We have lots of mitigation strategies, plenty of experience, and a team that knows how to go with the flow, even when the flow gets us all a little carried away. 🐟

One of our emerging leaders Jacob Regier joins a panel at the Canadian Freshwater Aquaculture Conference this week to explore the FINtastic opporTUNAties for young people in fish farming. 👨‍🌾

He joined next-gen farmers from across Canada to share why aquaculture is an awesome career, what a day on the farm is like, and why farmed fish is so trendy! 🐟🤸‍♂️

Jacob joined us eight years ago as a high-school co-op student. Since then, he's worked at every one of our farms, including three years on Manitoulin Island! 💪

He now works at our home farm Cedar Crest where the farm store and self-guided tours are, so feel free to get an autograph! 🙃
