The “art of the craft” definitely put us to the test this week! 🥐 Seasonal shifts usually just require a quick hydration tweak, but this time, the flour had other plans. After plenty of trials—and the big decision to switch to a new miller after years of consistency—we’ve officially cracked the code. The honeycomb is back, the flavor is perfect, and our croissants are exactly where they should be.
