Niu Rou Mian (Taiwanese Beef Noodle Soup)
Niu Rou Mian is a flavourful broth that is usually accompanied by beef shank that has been braised for hours. This ultra-easy variation is ready in under an hour and delivers lots of the flavour without the 6-hour cooking time!

Ingredients
400g stir-fry beef
1 onion, thinly sliced
2 tbsp tomato paste
2 tsp Gourmet Garden garlic paste
1 tsp Gourmet Garden ginger paste
1 litre hot water
2 OXO Beef Stock Cubes
3 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp Trident Sriracha Chilli Sauce
1 tbsp mirin
1 tsp sugar
½ tsp five spice powder
¼ tsp cinnamon
400g Trident Flat Ribbon Noodles
To Serve
Thinly sliced spring onion
Coriander
Steamed Bok Choy
Extra Trident Sriracha Chilli Sauce
Method
In a large pot with a little oil, toss the stir-fry beef over medium-high heat until browned, then set aside.
In the same pot, add the onion, and the garlic, ginger, and tomato pastes, reduce the heat to medium, and cook for a few minutes until the onion has softened.
Add the soy sauce, mirin, sugar, five-spice powder, cinnamon, and Trident Sriracha Chilli Sauce, and cook for one minute.
Return the beef to the pot and add the OXO beef stock cubes dissolved in the hot water. The water should cover the beef. Stir, and bring to a simmer, then cover and for 40 minutes.
Towards the end of the cooking time, bring a pan of water to a boil and add the Trident Flat Ribbon Noodles. Cook for 6-7 minutes, gently stirring so they don't stick together.
Drain the noodles, divide between four bowls, and immediately ladle the soup broth over them.
Top each bowl with pieces of beef, spring onion, coriander, steamed bok choy, and a drizzle of extra Trident Sriracha Chilli Sauce
