Easy Lilac + Elderflower cordial recipe ⬇️
🌸
🌸
In a pot, combine 1 kg of sugar and 1 liter of water. Bring it to a boil, then reduce to a simmer for 5 minutes, stirring until the sugar is fully dissolved and the syrup slightly thickens.
Turn off the heat and add:
• The flowers from around 8x heads of lilacs and 12x heads of elderflower (use as little stalk as possible to avoid bitterness)
• 1 whole lemon, sliced (skin included)
• 2 tsp citric acid
If you’d like to enhance the lilac color, add 1 tbsp of dried butterfly pea flowers, steeped briefly in a bit of boiling water (it will be on the pink side of lilac)
Cover the pot with a clean tea towel and let it infuse overnight. The next day, strain the mixture, pour the liquid back into a clean pot, and gently warm it up til just below boiling. Then pour the hot cordial into sterilised bottles and cap immediately. (Don’t forget to date and label!)
Store in the fridge for up to 6 months (if you sterilise well enough it will last longer than this. Any mould it’s time to throw out 🥰)
Lilac + Elderflower cordial adds a beautiful floral touch to bubbly water, sparkling w**e, cocktails, mocktails, jellies, and even as a syrup on pancakes. Please if you have access to these flowers make this (and let me know!) its so gorgeous 🌸
