We just cracked a new wheel of Ossau-Iraty, the delicious French cheese from the Basque region of the Pyrenees. Made with sheep’s milk, It’s got a semi-firm texture and a buttery, nutty flavor with notes of wildflowers and toasted almonds. We recommend pairing this cheese with a full-bodied red wine.
