Bright flavors are leading the way for our May Chef’s Tasting Menu:�

We start with Canary Island sea bass crudo paired with green strawberry, avocado, and Szechuan peppercorn sauce.

For the main course, tender New Zealand rack of lamb with harissa yogurt sauce, couscous, rhubarb, dates, and toasted almonds.

To finish, white chocolate and pine nut tart with yuzu sorbet, mint, and a pine nut crust.

Morels are one of those ingredients we wait for all year. That “wild” flavor comes partly from their structure. The ridges create more browning surface, while the hollow body and porous cap catch butter, sauce, and aromatics.

We’re leaning into bright spring flavors for the May Chef’s Tasting Menu.�

Starting with Canary Island sea bass crudo paired with green strawberry, avocado, and szechuan peppercorn sauce.

�The main is very Tunisian-inspired, with tender New Zealand lamb that arrived on the rack. Served with harissa yogurt sauce, couscous, rhubarb, dates, and toasted almonds.

�For dessert, white chocolate and pine nut tart with yuzu sorbet, mint, and a pine nut crust.
