All of our markets start next month!!

We’ll be back at Tucker Square Greenmarket in NYC starting Saturday, May 9.

Our farm store opens up for the season the following Saturday on May 16.

You can also find us back on Sundays starting May 17.

Friends! For the sake of content and for the love of mushrooms, we present to you: a beautiful Bear’s Head Tooth!

Hericium americanum, or Bear’s Head, is a native tooth fungus, choice edible, and close relative of the famed Lion’s Mane mushroom (Hericium erinaceus).

A young specimen of Bear’s Head was brought to us last fall by a close neighbor who found it while foraging in the woods. Theron successfully cloned this wild mushroom in the mycology lab and has been working closely with its mycelium all winter.

By mid-February the fungus had finally reached its fruiting stage, a miraculous event that left us completely mesmerized!

Though we’ve enjoyed growing this mushroom indoors in a controlled environment, we’re eager to free this mushroom from the lab and bring it back to its natural habitat come springtime. We’ll inoculate logs with some homemade Bear’s Head sawdust spawn once the weather warms up a bit…

Growing this local strain of Bear’s Head outdoors on the farm has a high chance of increasing the genetic diversity and geographic distribution of the species within the wider ecosystem, enhancing the mushroom’s adaptability to diseases and changing conditions of the local environment.

Also, with genetics already adapted specifically to this bioregion, this wild strain of Bear’s Head will be plenty resilient to local pathogens and naturally tolerant of this valley’s climate and weather patterns, much more so than if we were to grow other non-local, commercial cultures of Hericium.

In this way, supporting the growth of native fungal strains on the farm becomes a powerful practice of regenerative mycology, providing a mutualistic benefit for the fungus, the farmer, and, ultimately, the land at large.

Happy New Year everyone!!

We rang in 2026 with a magical walk through the Damascus Forest! Calm and quiet found us along the way, as we stood beneath an ancient stand of old growth hemlocks and towering white pines 🌲🌲🌲

2025 was a standout year for our farm, a year marked by absolute abundance and deep growth as farmers…

There are so many memorable moments from last year, but the 2025 strawberry glean might be the shining star of our season ✨✨✨

Sharing the gift and abundance of this beautiful land with the wider community sits at the heart of our values as farmers and land stewards.

We’re wishing all of you an amazing, abundant year ahead!

Surprise, y’all!! We’re wrapping up the year with a market reprise in NYC tomorrow!

Find us at Tucker Square Greenmarket in Manhattan from 8-4 at our usual spot.

We’ll have carrots, cabbages, kale, kohlrabi, lettuce, garlic, radishes, rutabaga, and a ton of super sweet spinach.

And here are some highlights from this week’s harvest:

Spinach, Brussels sprouts, blue oyster mushrooms, green beans, rutabagas, pea shoots, cabbages, sweet peppers, little gem lettuces, broccolini, and cauliflower.

We’ll also have winter squash, daikon radishes, shish*to peppers, bell peppers, kohlrabi, carrots, mustard greens, kale, bok choy, radicchio, beets, leeks, scallions, and garlic in store for you this weekend…
