Simple, elegant, and made with love. Today, Maria is making her Salmon Antipasto - a creamy shrimp and mascarpone filling wrapped in delicate slices of salmon.
Salmon Mascarpone Roll Recipe:
4 medium shrimp
½ cup mascarpone
¼ cup heavy cream
Juice of 1 lemon
1 tbsp Worcestershire sauce
1 tbsp butter
1 tbsp olive oil
2 tbsp ground pistachios
2 tbsp fresh parsley
Salt & pepper to taste
Thinly sliced salmon, for wrapping
Add all ingredients, except the salmon, to a blender or food processor and blend until smooth and creamy. Spoon the mixture onto thin slices of salmon, gently roll, and serve.
