I’m going to do the pineapple and Tajin wings tonight. I’m only making about 10lbs of them, so get in early if you wanna try them. Last weekend we sold out of them in 30 minutes.

I might have made a Philly Cheesesteak Quesadilla from scratch. I made a really nice cheese sauce, a really nice little marinade, sliced some really nice provolone, used a really nice ribeye, and it’s, well, really damn good.

I know a good part of the cheesesteak experience is the bread, but hear me out: you get the best of the meat and cheese without the heaviness of the bread on a nice toasted quesadilla.

I think it slaps.
