What sets our bakery apart?
As bread bakers and farmers for the last nearly 13 years we’ve often touted the quality of freshly baked sourdough loaves and locally grown produce. And today is no different. The same care and attention we practice in our fields is also present in our bakery. Behind a healthy sourdough starter our flour choices are the next most important consideration we make.
When baking bread, flour is not just flour. We have to consider how it’s grown & milled, its protein content, whether it's bleached, bromated or contains preservatives, cost and overall availability. It would be easy to choose conventional ingredients that cost less and are more accessible.
But how our food is grown and processed is perhaps the most important value to us when feeding ourselves and sharing with our community. This means we choose Certified Organic ingredients and do our best to source as locally or regionally as possible.
🌾 Where we source our flour:
Natural Way Mills based out of Middle River, MN and North Dakota Mill, our very own state mill.
We source 3 Certified Organic stoneground flours from Natural Way Mills:
1.) Gold n White: a creamy all purpose flour that contains the germ
2.) Whole Rye Flour
3.) Whole Spelt Flour.
Additionally, we use their Certified Organic 7-grain cereal in our Mighty Multigrain loaves.
We first tried North Dakota Mill’s Certified Organic Dakota Maid flour years ago when our local food co-op was still open. We really loved it, but couldn’t reliably source it and it was only sold in 5lb quantities. A few years after that we had a chance to source 50lb bags, but only when purchasing a whole pallet.
Although it’s not a whole, stoneground flour its quality and protein content is well suited for our bakery items and we like sourcing locally. We could talk extensively about the history and value of our state run mill, but that’s for another time.
