Who else has a sweet tooth? 🙋‍♀️

When considering what to bake this week for our last preorder and for Mother’s Day weekend I of course had my mom on my mind. I definitely inherited my sweet tooth from her and she especially loves cookies and all things lemon 🍋

So my Almond Poppyseed Lemon loaf made it back on the menu with a few of our other standbys: Cardamom Banana Bread and Rye & Sea Salt Chocolate Chip Cookies

I don't have a lot of memories of watching my Grandma in the kitchen. I was usually in the basement playing with my cousins or running around outside exploring the farm my mom grew up on.

But the memories I do have involved her hands, usually working some kind of dough. Often buttered/greased hands while making her famous buns or caramel rolls. I admired how effortless she made it look and her rings (her wedding ring was my favorite) as they would twirl around as she worked and get a little sticky with dough.

Never did it cross my mind I would one day find myself with my own hands in dough. Not only baking for my family but for countless others in our community.

I like to think every time my hands are in dough as a quiet nod to her endless work in the kitchen and her devotion to her loved ones. And although I don't remember her making anything specific to her Swedish heritage I think of her most when I'm making my Sourdough Swedish Cardamom Buns.

The cardamom buns feels almost like a hybrid of her bread buns and caramel rolls. An enriched, sweet dough twisted with a brown sugar & cardamom filling. Baked a little longer than my grandma would have done, but with good reason: to achieve the buttery crunchy exterior and caramelized filling.

As a baker having a favorite bread is a little bit like having a favorite child...how could you ever choose?! You simply don't!

But this week's baker's choice breads are some of our customer's faves and of course ones we really enjoy as well. If you're unfamiliar or haven't tried them keep reading to learn more. You could be enjoying one or both of them this weekend!

•Wild Rice Cranberry: I first had the inspiration for this loaf after a customer told me about a similar loaf she had in Minnesota. I was so intrigued and had to give it a go. Chewy cooked wild rice, plus tart dried cranberries and a touch of honey come together to make a delicious sourdough loaf.

•Marbled Deli Rye: our sourdough take on a deli classic. A rye dough and a molasses dough twisted together with caraway seeds.
Every time we have an extra loaf we always make 2 things: croutons for broccoli cheddar soup (recipe below!) and patty melts with lots of caramelized onions.

Chocolate Espresso Sourdough! My take on a chocolate covered coffee bean in sourdough bread form. Cold brew coffee replaces the water and chocolate chunks sweeten it. Plus some actual coffee grounds just in case the coffee flavor wasn’t strong enough 🤭

What sets our bakery apart?

As bread bakers and farmers for the last nearly 13 years we’ve often touted the quality of freshly baked sourdough loaves and locally grown produce. And today is no different. The same care and attention we practice in our fields is also present in our bakery. Behind a healthy sourdough starter our flour choices are the next most important consideration we make.

When baking bread, flour is not just flour. We have to consider how it’s grown & milled, its protein content, whether it's bleached, bromated or contains preservatives, cost and overall availability. It would be easy to choose conventional ingredients that cost less and are more accessible.

But how our food is grown and processed is perhaps the most important value to us when feeding ourselves and sharing with our community. This means we choose Certified Organic ingredients and do our best to source as locally or regionally as possible.

🌾 Where we source our flour:
Natural Way Mills based out of Middle River, MN and North Dakota Mill, our very own state mill.

We source 3 Certified Organic stoneground flours from Natural Way Mills:
1.) Gold n White: a creamy all purpose flour that contains the germ
2.) Whole Rye Flour
3.) Whole Spelt Flour.
Additionally, we use their Certified Organic 7-grain cereal in our Mighty Multigrain loaves.

We first tried North Dakota Mill’s Certified Organic Dakota Maid flour years ago when our local food co-op was still open. We really loved it, but couldn’t reliably source it and it was only sold in 5lb quantities. A few years after that we had a chance to source 50lb bags, but only when purchasing a whole pallet.

Although it’s not a whole, stoneground flour its quality and protein content is well suited for our bakery items and we like sourcing locally. We could talk extensively about the history and value of our state run mill, but that’s for another time.
