We had a couple of halves open up from this month's beef, so if you've been thinking about stocking your freezer, now is a good time to grab one.

Our beef is raised right here at 7 Mile Ranch in Choctaw and sold by the half at $10.50/lb hanging weight.

Your half will be cut to your specifications, packaged, frozen, and ready for your freezer.

If you've never bought beef by the half before and aren't sure how the process works, don't let that stop you! I'm happy to walk you through it, help with your cut sheet, and answer any questions you have.

If you've been interested in trying our bulk beef program, but feel a little unsure about what hanging weight means and how much meat you will actually take home, this post is for you!

Hanging weight is the weight of the beef after the animal has been processed and the hide, head, and internal organs have been removed, but before the beef is aged, trimmed, cut, and packaged.

Hanging weight is not the same as the amount of packaged beef that goes into your freezer. During aging and cutting, additional weight is lost through moisture, bones, fat, and trimming. Your final take-home weight also depends on the cuts you choose.

Here's a real example from one of our recent half beef orders:

🥩 Half Beef

Hanging weight: 232 lbs
Price: $10.50/lb hanging weight
Total: $2,436
Actual take-home weight: 138.95 lbs of beef

Every half will be a little different.

The variation in take-home weight depends partly on what you put on your cut sheet. If you want soup bones, fat, liver, heart and other parts of the animal, your take-home pounds will be greater. If you choose boneless steaks, have more fat trimmed away, don't want soup bones or organs, etc., your take-home pounds will be smaller.

And as far as volume—meaning how much freezer space does half a steer actually take?—it's about two 30-gallon plastic totes full. That's the big black ones from Walmart or Sam's with the yellow lids.

Hopefully that takes a little of the mystery out of buying beef by the hanging weight!

If you've been thinking about buying a half or whole beef but have questions about how it works, don't be afraid to ask. Most people don't know any of this until the first time they buy beef in bulk!

I figured I'd let ChatGPT fight with the graphic design demons instead of me. It did a much better job than I could and probably saved me from inventing a few new curse words.

The meat photos, though, are 100% ours. That's the meat in our freezer!

If we've never met, hello!

I'm Carrie, the ranch manager, and you'll be hearing from me here on the 7 Mile Ranch page.

Over the past few months, I've taken over managing the ranch's beef sales, so if you've called, emailed, or messaged us recently, there's a good chance we've already talked.

I am going to be making some upgrades to the ordering/payment process as well as working on keeping our website up to date.

One thing I'm excited about is sharing more of what goes into raising beef here at 7 Mile Ranch. Of course we'll continue posting beef availability and butcher dates, but I also want this page to be a place where you can learn.
