Well, here’s our honest review after trying pig’s head for the first time…
The flavour was absolutely incredible. Some of the tastiest pork we’ve ever eaten. Slow cooking really lets all that collagen, fat and flavour come together, and the meat was rich, tender and packed full of taste.
Now for the downsides…
It is definitely a rich meal. There is a lot of fat, which is great for flavour, but you probably wouldn’t want to sit down to a whole plate of it every week. It also takes a fair bit of work to pick through and get all the meat out, so it’s not exactly a quick and easy dinner.
Overall though, we’re really impressed. This was a great reminder that some of the most overlooked cuts can often be the most flavoursome.
