James Brown Blue is back! If you like Cabrales or other strong assertive blue cheeses, James Brown Blue truly brings the funk! This well aged version of our Black Ledge Blue has a fudgy texture and mineral flavor that dissolves in your mouth, with a finish like a shot of vodka.

We made our our last batches of the season yesterday of Gossamer and Hooligan! We only make these cheeses in the cooler months when the milk fat is high and cave conditions are ideal for ripening. We will resume production of both varieties in September. But don't despair! We'll still have Gossamer on sale through early July and Hooligan until at least August.

It's almost Memorial Day weekend and it's time for grilling. What goes better with a burger but our Vivace cheese or Black Ledge blue! Come on out to the Westport Farmers Market tomorrow and get some of this delicious cheese to top that burger! From Hay to Harvest Gold! 🌿🧀

​Our girls headed out to pasture on May 2nd, and the "spring flush" is officially here! You might notice our latest wheels of Aged Bloomsday are looking a little more golden every new batch. The batch on the left is from May 6 and on the right is May 9. Can you see how much deeper hue is developed in just a few days?

​That vibrant yellow comes from the high levels of beta-carotene found in fresh, green grass. Not only does the color change, but the flavor profile shifts too—bringing out those bright, complex grassy notes we look forward to all year.

It's grilling season! Here at Cato Corner Farm we have a brand new item Our own grass-fed beef chorizo sausage! They are $12 a package for this weekend at our Farm Shop in Colchester. We are open today until 4:00 p.m., Saturday from 10:00 a.m. to 4:00 p.m. and Sunday from 11:00 a.m. to 4:00 p.m. We also have our own grass-fed ground beef and lots of steaks for your grill with this beautiful weather we're about to have.

Thank you to everyone who helped us celebrate the start of pasture season on Saturday! The cows were so excited to be back in the field and grazing on delicious fresh grasses. 🌾
