This is particularly true for the delicate, easily damaged Pinot Noir grape. We knew from the start th

at the building at Archery Summit would be, despite cost, a gravity flow winery. Our winery integrates classic architecture and technically advanced viticulture. Built into the hillside of our estate vineyard, the winery has five floors, two above ground and three below. Grapes are received in small capacity bins, hand-sorted, and de-stemmed on the top floor then travel downward one floor at a time to our fermentation hall, aging caves, and bottling area, all without character damaging pumps. With its Mediterranean exterior and subterranean caves, the Archery Summit winery, like our wine, is an original expression of old-world aesthetics and new-world savvy.

Summit Vineyard starts just outside the Tasting House door and falls away down the hill, 550 feet down to 200. South-facing the whole way. Planted in Jory, the iron-rich volcanic soil that lets roots dig deep and makes the vines work for everything they get.

It's the site we walk most and know best. Sixteen acres, first planted in 1994, farmed block by block because the top of that slope and the bottom of it ripen on different schedules. Whole-cluster fermentation when the vintage asks for it. As little interference as the season allows. The intention is simple enough: whatever ends up in the bottle should belong to this hillside and nowhere else.

Kim spent this morning walking the rows between Summit and Archer's Edge. The fruit has started to turn purple. Picks get called in the next couple of weeks, and then everything on this estate changes speed.

So she sat down in the grass between the two vineyards to take it in for a minute. Today also happens to be National Pinot Noir Day, which is decent timing. From Kim and the whole team out here: thank you for raising a glass to the one grape we've built all of this around.

What makes one hillside worth naming, and the next one not?

Five estate vineyards, spanning roughly 150 acres, with 55 acres under vine. All are located in the Dundee Hills and rooted in the same iron rich Jory soil. Creating five completely different Pinot Noirs. Arcus climbs the steepest slopes in the region, with vines that went in the ground in 1973. Summit wraps the winery itself. Renegade Ridge faces east, sits cooler, and gives up its fruit last every year. Change the elevation, the exposure, or the age of the vine and you change the wine. That's the whole argument for farming this way.

Every great Willamette Valley adventure deserves one memorable finale.

The Sunday Encore runs every Sunday, 11 a.m. to 2 p.m. Reservations for ninety minutes on the terrace or in the Tasting House, a rotating menu of seasonal bites, live music drifting across the hillside, and wines that give the weekend one last reason to slow down. Afterward, stay on the Lower Terrace with a glass or bottle, space permitting.

There's a week in August when the fruit starts to turn. Green to garnet, cluster by cluster, quietly, and then all at once.

Veraison on the estate. The vines are heavy, the light stretches long into the late-summer haze, and the terrace happens to be the best seat in the Dundee Hills for watching a vintage decide what it's going to be. Come sit in it while it's happening.
