Salt. Pepper. Smoke. Patience. 💨🥩

Our October Taste of the Season recipe is Classic Texas Smoked Beef Brisket, made with one whole Finke Farms Brisket, a simple 50/50-style salt-and-pepper rub by volume, and post oak or hickory wood.

Smoke the brisket fat side up at 225°F for about six hours. When the center reaches 165°F, wrap it tightly in unwaxed butcher paper and return it to the smoker until it reaches 200°F. Then give it at least two hours in a dry cooler before slicing against the grain.

A full day at the smoker. A centerpiece worth the wait.
