Stangel Bison Ranch Family owned and operated ranch since 1979. Retail/wholesale meat readily available, live animals, skulls, and robes.

The Stangels come from a long line of farmers and ranchers who migrated from north central Oregon to their current location, Enterprise, Oregon, in 1958. The three Stangel brothers, Joe, Bob, and Dick formed a partnership that was originally comprised of farming dryland grain, raising cattle, and operating a heavy equipment and machine shop. Bob has managed the farm and ranch portion of the partne

rship, which began its transition from cattle to buffalo soon after Bob graduated from college. In 1979 Bob and his brother Joe purchased six heifers and two bull calves from a rancher in Colorado and by 1987 all of the cattle had been sold and the transition to a strictly buffalo livestock operation was complete. Throughout the years the ranch numbers have fluctuated from a high point of over eight hundred head to its current number of close to five hundred.

NEW CUTS!!
This weekend we are debuting a couple new items on the cut list! (Recipe below!)

Bison Ribeye Steak Bites- Ribeye, but make it bite-sized. Tender, flavorful, and ready for a quick meal or tasty appetizer.

Bison Ribeye Fat- Render it down or use it as is. A great way to add some extra richness to any savory dish! One of my favorite way to utilize this type of fat is to use it for searing steak or vegetables. It has a higher smoke point which allows you to get a great sear or char, and has a way better flavor than other oils.

Hot Honey Butter Bison Steak Bites

Theresa’s Hot Honey Butter Sauce
-1/2 c. Butter
-1/2 c. Honey
-2 T Chipotle Peppers in Adobo Sauce, diced
-1 1/2 T Garlic Powder
-1 t Cayenne Pepper
-1 t Korean Red Pepper Flakes
-1 t Salt
-1/4 t Paprika

Bison Ribeye Steak Bites
-1-2 lbs Bison Ribeye Steak Bites
-Minimal Seasoning to taste, I dusted with a little salt and pepper

Directions
Theresa’s Hot Honey Butter Sauce
-In a medium sauce pan over low to medium heat melt butter.
-After butter is melted, add the honey, and stir until fully combined.
-Add remaining ingredients, combine thoroughly, and allow to start to simmer, stirring periodically.
-Remove from heat. For storage, allow to cool and store in the refrigerator.

Ribeye Steak Bites
-Pre-heat grill, oven, or frying pan. These are best cooked quickly at high heat.
-Season steak bites as desired.
-Steak bites can be tossed in the Hot Honey Butter Sauce or cooked with no sauce (drizzle or dip in sauce after cooking).
-Cook steak bites to medium rare/medium, or desired doneness.
-4 - 5 + minutes high temperature on the grill or under broiler
-Drizzle, or dip in, Hot Honey Butter Sauce.
-ENJOY
