1 lb ground beef
1 taco seasoning packet
ยฝ tablespoon avocado oil or beef tallow
5 6โ€ tortilla shells

Optional Toppings:
cheddar cheese, shredded or sliced
onion, diced
lettuce, chopped
tomato, chopped
sour cream
fresh cilantro, chopped

In a medium bowl mix the ground beef with the taco seasoning. Using your hands, measure out 5 even portions of the meat mixture.

Press a portion of the meat mixture onto a tortilla shell making sure to cover the entire tortilla. Using your fingertips indent the center of the meat patty. This will prevent the meat from shrinking too much while it cooks.

Drizzle avocado or tallow in a skillet over medium-high heat. Place the burger and tortilla burger side down on the hot skillet. Cook for 3-4 minutes or until the burger crisps up on the edges. Flip the burgers over and immediately top with cheese and cook for another 2-3 minutes. Remove the smashed burgers from the skillet and top with onion, lettuce, tomato, sour cream and fresh cilantro.

Serve warm.

Mediterranean Meatballs with Tzatziki Sauce Recipe

For the meatballs:
1 lb ground beef
ยผ cup almond flour
ยผ cup crumbled feta cheese
2 tablespoons sundried tomatoes, chopped fine
1 egg
1 tsp dried oregano
1 tsp dried basil
2 cloves garlic, minced
Salt and pepper to taste

For the Tzatziki Sauce:
1 small English cucumber, grated
1 cup plain Greek yogurt
1 clove garlic, minced
1 tablespoon fresh lemon zest
1 tablespoon fresh lemon juice
ยฝ tablespoon olive oil
1 tablespoon fresh chopped dill

In a small bowl, mix all the Tzatziki Sauce ingredients until well combined. Cover bowl and allow to the sauce to chill in the refrigerator while you prepare the meatballs.

In a medium sized bowl, mix all the meatball ingredients until well combined. Form the meatballs by measuring out 1/3 cup of the meat mixture and rolling it in between your palms to form a ball. Place the meatball on a baking sheet lined with parchment paper. Repeat with the remaining meat mixture.

Place the meatballs in a preheated oven set at 375 degrees. Cook meatballs until browned and a meat thermometer reads 135 degrees. About 15-20 minutes. Remove the meatballs from the oven and allow to cool.

Serve meatballs with the Tzatziki Sauce, fresh tomato, cucumber, kalamata olives and pita bread.

1 large cauliflower head
ยพ cup parmesan cheese, grated
1 tablespoon butter

1 tablespoon avocado oil
2 pounds ground beef
Salt and pepper to taste
1 tablespoon butter
1 large onion, chopped
2 large carrots, diced
3 large celery stalks, diced
1 cup frozen peas
2 sprigs each rosemary and thyme
1 tablespoon flour
1 cup of red wine
1 ยฝ cups beef stock
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
2 bay leaves

In a large pot, bring 2 cups of water to boil. Add the cauliflower florets and cover with a lid to allow cauliflower to steam. Cauliflower is done when pierced with a fork and cauliflower is soft. About 10 minutes.

Remove cauliflower from the pot into a high-powered blender. Add parmesan cheese and butter and blend until smooth. Set aside.

๐™๐™ค๐™ง ๐™ฉ๐™๐™š ๐™ข๐™š๐™–๐™ฉ ๐™จ๐™–๐™ช๐™˜๐™š

Heat avocado oil in a large skillet set over medium-high heat. Add the beef burger, salt and pepper and cook until brown. When done, remove the beef burger into a bowl from the pan with a slotted spoon and set aside.

Add the butter to the pan. Add onions, carrots and celery and sautรฉ for 2 minutes. Add frozen peas, rosemary and thyme. Sprinkle flour over vegetables and cook for another 2 minutes.

Add wine, beef stock, Worcestershire sauce, tomato paste and bay leaves. Stir to combine. Turn heat up to medium-high and bring sauce to a boil. Reduce heat to low and add the beef burger. Simmer mixture for 5 minutes โ€“ until sauce has thickened.

In a 9x13 casserole dish add the meat mixture. Spread the cauliflower mixture over the meat sauce and bake in a 350-degree oven for 30 minutes.

Turn oven to a low broil and bake for another 10 minutes or until the topping has turned golden brown.

Remove the Shepards Pie from the oven and rest for 20 minutes before serving warm.

Pot Roast Grilled Cheese
What's Cook'n with the Cook's?

Ingredients:

-2 slices of artisan sourdough bread
-2 tablespoons of butter
-ยฝ cup cooked and shredded beef pot roast (at room temperature)
-2 slices of cheese (that melts well like pepper jack or gouda)

Method:

Heat the Griddle: Place the griddle over medium heat and melt 1 tablespoon of butter. Lay a slice of bread on the griddle โ€“ moving it around to soak up all the butter.

Layer the bread: stack 1 slice of cheese, beef, another slice of cheese and then another slice of bread. While the sandwich is grilling, butter the top slice of bread with the other tablespoon of butter.

Grill to Perfection: Once the cheese is beginning to melt and the bread turns golden brown, flip the sandwich carefully with a spatula and cook the other side until golden brown and all the cheese has begun to melt. Gently remove the sandwich from the griddle and let rest one minute before slicing in half.

Serve warm.

-2 tablespoons avocado oil
-1 pound Rocking R Cattle ground beef
-6 scallions, chopped fine
-4 garlic cloves, minced
-2 jalapeรฑos, stemmed, seeded and minced
-1 small red bell pepper, chopped fine
-ยพ teaspoon salt
-ยผ teaspoon baking soda
-1 teaspoon dried thyme
-1 teaspoon curry powder
-1 teaspoon turmeric powder
-ยพ teaspoon ground allspice
-ยฝ teaspoon ground black pepper
-1 slice white sandwich bread, torn into small pieces
-6 medium size tortillas
-8 oz white cheddar cheese, grated

๐—ฆ๐—ฎ๐—น๐˜€๐—ฎ ๐—œ๐—ก๐—š๐—ฅ๐—˜๐——๐—œ๐—˜๐—ก๐—ง๐—ฆ:

-1 fresh mango, chopped fine
-1 small red bell pepper, chopped
-3 tablespoons red onion, chopped fine
-Juice and zest from 1 lime
-Salt to taste

Heat oil in a 12-inch skillet over medium heat until smoking. Add beef and cook, breaking up the meat with a wooden spoon until it begins to brown, 5-7 minutes. Add scallions, garlic and jalapenos and cook another 2 minutes. Add salt, baking soda, thyme, curry, turmeric, allspice and black pepper, stirring frequently. Add bread pieces and cook until scallions are softened, for about 2-3 minutes. (If the mixture appears dry, add a tablespoon of water at a time until the mixture looks moist.)

Remove mixture from heat and set aside.

2026 Calving season started early with this tiny heifer. Born premature and only 72 hours old, she is independently nursing and thriving. Her mom, Rose, is a senior team member and we do wonder if she checked the weather forecast and decided to get things moving forward. Calving early means room service 3 times a day , daily housekeeping and turn down service. Good job, Rose!
