This is one of those cuts that’s gaining a serious following, and once you get it on the grill, it’s easy to see why.
Picanha is the sirloin cap — the muscle that sits right on top of the top sirloin, with a beautiful fat cap that helps keep it juicy and full of flavor.
We follow the natural seam, pull the cap off clean, trim the fat, and shape it into one of the most prized cuts for grilling.
It’s famous in Brazilian barbecue, but it works a bunch of ways: sliced into steaks, cooked whole like a small roast, Santa Maria style, or reverse seared low and slow before finishing hot.
