The Beauty of 🌱✨

Hello, Spring! We are well into bud break on DAOU Mountain—the initial stage of a vine’s annual growth cycle. Dormant buds swell and burst open to reveal new green shoots, leaves, and eventually flowers. This process is a crucial indicator that the vine has emerged from winter dormancy and is triggered primarily by warming temperatures and increasing day length.

Next stop? Flowering!

Thomas McCall, “Beeman” (Apiarist) and owner of , is no exception! Thanks to Thomas and his expertise, our property is pollinated and our Estate Honey is delicious. 😍

As third generation beekeeper, Thomas learned the noble craft from his grandfather, and has carried on the family tradition ever since. “As a small operation, I oversee every step of the process to ensure the highest quality. Instead of running a large commercial outfit, I chose to focus on honest, real, raw honey harvested in small batches from secluded private ranches along California’s Central Coast.” DAOU Vineyards being one of them! 🐝

Each season, when the nectar begins to flow, Thomas uses special honey boxes reserved only for honey production (no breeding, pollination, or other uses) to collect that “liquid gold” from the Central Coast hills. “My process is slower than other operations to ensure the quality of the honey is not jeopardized. No heat, no steam, and no separators are used in my extraction process. The result is pure, raw honey, handled with care to preserve its natural flavor and quality.” 🍯
