Scenes from Mezcal Island…
Older than tequila and utilizing over 30 agave varieties, mezcal’s earthy, smoky flavor comes from its unique artisanal underground roasting process. Few mezcals are mass produced, and many batches are still made by hand in small rural communities.
Bacanoras (made exclusively in Sonora) tend to be less smoky with brighter green notes like aloe and fresh grass.
Raicillas are localized to the southwest mountains and coastal towns of Jalisco, and roasting methods are split between underground pits (mountain style) and aboveground adobe ovens (coastal style). Lighter in smokiness, raicillas can be funky and acidic, and carry more tropical and botanical notes.
