Black walnut syrup is here again! This is our second year making black walnut syrup and man is it a special treat. And a labor of love! We put out 127 taps this year, boiled off 360 gallons of sap, and ended up with ~4 gallons of finished syrup.

We like syruping cause it gets us out of the house in late winter when we're stir crazy. And sitting around the boiler with friends is a joy.

The reason you don't see walnut syrup in grocery stores is because of the labor involved. Maple trees are more productive, meaning they produce more sap per tree AND the sap has about twice the sugar content as walnut. So for maples, you have to boil 40 gallons of sap to end up with 1 gallon of syrup. Whereas for walnuts, it's about 80 to 1. But it's worth it!

We think walnut syrup tastes deeper and darker with lower tones. And has almost a smoky flavor to it.

We have a limited quantity available at the .ohio only!! We'll bring 12 bottles a week until it's sold out.

We've got big news to share! We are transitioning into being the new owners of the Shew Family Farm.

This winter, we have been discussing the possibilities of a farm transition — as Pete & Marjie sought to create a plan for retirement, in hopes that their farm could be stewarded in a similar manner, and as we sought to expand our beef operation on our current limited land base.

With guidance from our Uncle Jon Sowash, we devised a land contract to purchase the farm over the next many years in installments. In December, we also purchased the Shew’s brood cows and young calves.

Pete & Marjie will continue living in their home. And we will continue living on our Athens farm where we'll run the pastured pork operation. They will be raising their butcher-ready steers and selling beef at the Athens Farmers Market this season before retiring in the fall. We are grateful that they will be staying on the property and advising us, as we get to know the farm and continue to learn as first-generation farmers.

This 10-week program supports 14 beginning farmers in writing a business plan, meeting with a cohort of beginning and established farmers to review key business topics, and talking individually with their dedicated mentor.

Mentorship has played a pivotal role in the formation of our farm business. ✨️ Holiday special incoming! ✨️ This pork rib roast is juicy, tender, and full of acorn-finished flavor. No joke, we sampled this the other day with friends and literally cut it with a butter knife it was so tender. The frenched bones make this roast a stunner on a holiday table - shoutout to The Local Butcher for cutting these beauties. At 4-5 lbs each, this will feed about 5-7 people.
