New arrival: Honduras Finca Terrerito. Maple, almond, plum.
Terrerito sits in the mountains of Copán, founded by Adelmo “Al” Lopez. Al is a fourth-generation coffee grower. He brings new technologies and techniques to his family's storied production, ensuring a clean, consistent portfolio of diverse flavor profiles.
The neighbors are in this lot too. Terrerito buys fresh cherry from small producers in Belén Gualcho and San Sebastián, pays them the day they deliver, and gives them access to processing they could not run on their own. The value stays on the mountain.
Honey processed — the fruit's skin is stripped, but the sticky mucilage stays on the bean. It ferments slowly out on the patio while the coffee dries, and that is where the maple and the stone fruit come from.
