This dough took a little work to get out, but that doesn’t mean it wasn’t ready. It’s why experience matters.

I was about to load almost 70 loaves into my big fridge, which slows down the cooling process. The dough will continue to proof slightly, so I cut the fermentation a bit shorter and let the cold re**rd do the rest of the work for me.

If you want to truly know your dough, keep going. Try new techniques. Make bread. Then make some more.

All those hours working with dough become invaluable — to you, your business, your customers, your confidence, and of course… your bread. 👩🏻‍🍳

Can we talk about the self-doubt that comes with being a market vendor?
The fear of the unknown… wondering if all the work will be for nothing.
The competition, the weather, the customers.

These thoughts show up for me week after week.

But then market day comes.
Everything is set up, and I watch people—new and familiar—walk up to my tent, choosing bread to bring home to their families.

It’s indescribable.

This week I made more than I ever have—142 different kinds of breads, plus other baked goods.
6 were gifted, 30 were preordered, and 15 were set aside for the stand. The rest came with me to market.

At the end of the day, I had just 2 loaves left.

What an honor it is to feed that many families.

Some bakers prefer using their hands, but I reach for my bench scraper. It gives me cleaner shaping and less handling during the preshape. After a 20-minute rest, I move into final shaping.

This method has been my go-to since starting my bakery—it saves time and just works. I’ll try other techniques, but I always come back to the caddy clasp.
