🥧✨ Monster Farm Harvest Pie
Before pie crusts and ovens were common, early settlers made pumpkin pie right inside the pumpkin itself. 🎃 They’d hollow it out, fill it with milk, honey, and spices, and roast it in hot ashes until the custard set. Simple, rustic, and deliciously resourceful.
We gave this old-fashioned recipe a Monster Farm twist using our Winter Luxury Pie Pumpkins, known for their silky texture and naturally sweet flavor. (But any small pumpkin will do!)
Ingredients:
1 small pumpkin
¾ cup sugar
3 large eggs + 4 yolks
½ Tbsp vanilla extract
2 cups heavy cream
1 tsp cornstarch
Pinch of salt
How to Make It:
Cut the top off your pumpkin and scoop out the seeds.
Whisk sugar, eggs, vanilla, cream, cornstarch, and salt until smooth.
Pour into the pumpkin, leaving about ¾” at the top.
Bake at 400°F for 15 minutes, cover loosely with foil, and bake another 15.
Lower to 375°F and bake 45 more minutes or until mostly set.
Cool 1 hour, then chill for 6+ hours. Scoop and serve warm or cold.
💛 Monster Tip: Scrape a little pumpkin with the custard for that caramel-sweet flavor!
