Meet the Farm Monday!!

Captain is a sweet ram we recently purchased for our ewes he is just an awesome ram we hope to keep for a few years. I find it fascinating to watch him correct our yearling ram when he gets out of line with the ewes, for example if Atlas (yearling) is too rough with the ewes during feeding Captain will quietly, but firmly, step between them and Atlas will get the memo. Overall, he is a great presence.

Happy spring everyone! Hope you all are enjoying the sun today. We are so happy the sun is finally coming out from behind the clouds. We are also expecting babies soon! Millie and Carmen are getting big, and their bags are filling up!! We expect one kid out of Mille but Carmen, she is quite the oversized load at the moment. Anyway, that was just a quick little update, hope you guys have a good week!

Maggie has been with us for just over a year now and she is just the sweetest mare. She is currently recovering from an injury in her leg but soon she will be back in action. !!!Young Ram for Sale!!! (could be wethered)

This is Atlas, he is one of the sweetest rams we have raised. His dam is a large Romney cross ewe she has some Jacob, Montadale, and Dorset. His sire (not pictured) is a Katahdin. Both of his grandams are VERY good mothers and have produced strong and hardy lambs for years. He is also halter broke and will run up to you and follow you around the pasture. He is about 7 months old. He is looking for a flock to call his own. We want him sold as a stud, pet, show sheep, or companion. We are willing to possibly trade for a Jacob or Romney (cross?) ram. FARM FRESH FRIDAY

ZUCCHINI PARMESAN

Eggplant parm is a favorite at our house, but at this time of year, we’re eating zucchini every night so time to break out of the norm. Cultural side note: my husband’s side (Italian) calls it ā€œgagootzā€ which is the Calabrese pronunciation for cucuzza (any squash like veggie).

1 medium zucchini
1 cup flour
3 eggs
1 cup bread crumbs
1/4 cup grated Parmesan
1/4 cup shredded mozzarella
vegetable oil
2-3 cups of gravy*

Slice zucchini. Heat veg. oil in pan. Spread some gravy on the bottom of a 9x11 baking dish. Bathe zucchini in flour, egg and bread crumbs. Fry for two minutes on each side. Line zucchini in the baking dish. When it’s fully lined with zucchini generously spread more gravy on the fried zucchini and in the nooks and crannies. Sprinkle grated mozzarella then Parmesan on top. Cover with tin foil and bake for 20 minutes at 350 degrees until some of the cheese is slightly browned. Enjoy with a glass of Chianti:)

*Gravy is the most sacred of Italian family recipes so I can’t share it. I swore it in my wedding vows.

MEET THE FARM MONDAY

LIZA ā€˜HEN’NELLI is a beautiful black Maran chicken who went broody about two weeks ago. Usually if a chicken is sitting in a nesting box we assume she’s laying so we just check back later to collect her egg. But Liza is still sitting and only gets off periodically to eat or drink. She has a few different types of eggs under her as 3-4 chickens lay in this coop. When the broody hen gets off to eat, sometimes the other chickens pop into the box to lay so she’s got about 8 eggs under her:) It’s pretty cool to watch how she gently gets up and turns the eggs then settles down on top of them while spreading herself out like a black beret. Five to eight chicks should be hatching any day!

FARM FRESH FRIDAY

COLD SOBA NOODLES WITH PORK

Soba noodles (Japanese) can be made with a variety of ingredients and served hot or cold. One package fed our family of five hangry farmers. Soba’s made from buckwheat which is not actually wheat but related to sorrel, knotweed and rhubarb. If you’re gluten-free double check the ingredients to make sure there’s no added wheat. I used pork in this recipe and cooked it in the Instant Pot. I’ve added substitutes for Dashi and Mirin but all of the other ingredients can be found in your local grocery store or co-op. Partner up with chilled sake for the the grown people.
Simply made, fairly fast and oh-so-satisfying!

(1) 8 oz. package buckwheat
4-6 oz. Easy Acres pork
1 c. water
(2) green onions
(1) clove garlic
1/2 c. shredded cabbage

Sauce
1/4 c. soy sauce
1 c. Dashi (sub with chicken stock)
2 tbl. Mirin (sub with 1 tbl. honey, 1 tbl. water)

Throw frozen pork and water in the Instant Pot for 45 minutes. Boil soba for five minutes. Drain and return to pot with ice water. Drain after noodles have cooled. Return to pot. Add in finely chopped green onions, minced garlic, cabbage and sliced pork. Mix ingredients for sauce in a separate bowl. Add to noodles. Garnish with bonito flakes (fish flakes). Serve with edamame.
