We focus our winemaking on vineyard designated Pinot Noir, Pinot Gris and Goat Bubbles sparkling wine with five expressions: Rosé, Crémant, Blanc de Blancs, Blanc de Noirs and Brut Cuvée. Our

wines are authentic, easy, approachable and perfectly balanced to pair with food. We don’t own any vineyards but after 40+ years in the business, winemaker Norm Yost has developed close working relationships with quality growers. We’ve carefully chosen our vineyards to represent different terroir with fruit that offers a wide range of textures and flavors. Norm has been making wine for over 40 vintages and has a particular passion for Pinot Noir. In 2000, he launched his own label, Flying Goat Cellars, specializing in vineyard designated Pinots from California’s Central Coast. Norm shared his passion with Kate Griffith by courting her with his first release of Goat Bubbles in 2006. We don’t know if it was the bubbles or the winemaker’s charm but it culminated in a marriage and a family of wines. Now Flying Goat Cellars produces about 2,500 cases a year and includes three labels: Flying Goat, Goat Bubbles and YNOT. Flying Goat focuses on vineyard designated Pinot Noirs and Pinot Gris. Goat Bubbles offers five vineyard designated sparkling wines: Rosé, Crémant, Blanc de Blancs, Blanc de Noirs and Brut Cuvée. YNOT offers both a Pinot Noir and a Chardonnay, blended from the finest of Santa Barbara County vineyards.

It's always a pleasure to see the transformation from worthy grapes to fermented wine in action. A great Pinot Noir begins in the vineyard--and this particular vineyard has been winning over customers and club members since the 2020 release first hit the shelves. Winemaker Norm Yost is well-versed in extraction techniques that lead to complex sensorial properties in his wines as they mature in new and neutral French oak barrels. After the appropriate stint of aging and steps of clarification, the flavor and appearance of the beverage is deemed ready to move from its holding vessel into individual bottles. We expect the fully matured product will hold olfactory delights of black currant, ripe cherry, and bold spices--but only time will tell. Time to capture the last, pure expression of the weekend. We've been enjoying hearing about everything from sporting events to birthdays and vacations during this lazy Sunday afternoon under sunny skies. Ready to be borne along into the stream of the weekend? We've already reached a noontime blaze of glory here in the wine ghetto, as our neighbors at Dark Water Winery ( ) have invited a Kansas City style BBQ food truck to provide smoke and sizzle throughout the afternoon. A hearty congrats to all of our grads this summer. Learning is an endless labor as we work towards all that we want to achieve. You've studied the afternoon skies long enough to know the most intimate shade of blue, what the sphere above means and doesn't mean, and how a thought can burst out of the head with such suddenness that it is carried away on the wind. Sometimes it pays to walk backwards from the degrees or laurels and observe the opening of a flower as it blooms against the clouds. We hope that you keep trying to find the answers at the root of all the lessons that are still to come.

Sadly, our beloved Cooper passed away a few weeks ago of natural causes. He had been a bright light in our lives for almost 13 years. We adopted him at 5 weeks due to the urgency of an unwanted litter. His early imprinting with us created a unique bond. A news article dubbed him
